3 2 1.... Bake! Our lovely Lucy Birks is back for a bake along, last year she taught us how to make her delicious cookies and this year we will be learning how to bake her Easy Jam Cake.

What you will need:
Equipment needed
· Hand blender or food mixer (can be done by hand with a spoon but will take time)
· Bowl (if not using a food mixer)
· 20cm/8inch deep cake tin
· Metal spoon or spatula
Ingredients
· 175g golden caster sugar (normal caster will also work)
· 175g unsalted butter (room temp) plus extra for lining tin
· 340g good quality Jam (flavour of your choice) Lucy will be using black currant to make a Black Forest type
· 3 medium sized eggs
· 175g self-raising flour
· 50g cocoa powder (if you want a vanilla cake add 50g more flour in place of the cocoa powder and 1 teaspoon of vanilla extract)
· Icing sugar for dusting (optional)
